Inspired by the classic dish, the Backpacker’s Pantry Huevos Rancheros is made with all-natural, free-range eggs with red beans, green chiles, red bell peppers, cheddar cheese, onions and spicy seasoning. This meal is high in protein and is a great meal to start your day.
Directions: Remove and discard enclosed oxygen absorber before beginning food preparation. Add 1-1/4 cups (300 mL) of water. Blend well. Let stand for 10 minutes to allow the beans to rehydrate. Blend again. Cook over low heat in a nonstick pan. Stir frequently.
